Taco-stuffed Tomatoes

Taco-stuffed Tomatoes thumb
Create a delicious and healthy version of taco using our recipe below:

Ingredients List:


  • ½ medium red onion

  • 1 tsp olive oil

  • 8 oz ground lean beef

  • 1 tsp taco seasoning

  • Salt and black pepper

  • 4 medium tomatoes

  • 1 oz cheddar cheese

  • Lettuce

  • 4 oz sour cream



Steps:

  1. Mince the red onion, then place on a pan with olive oil. Stir fry.

  2. As soon as the onion becomes nearly cooked, place beef on the pan. Mix with the onion thoroughly.

  3. Afterwards, pour 1 tsp taco seasoning and a pinch of salt and black pepper. Blend well and stir fry until cooked.

  4. Cut an X on all four tomatoes, then one across to make six evenly-sized sides. NOTE: DON’T CUT ALL THE WAY THROUGH!

  5. Open up the center of the tomatoes to make space for the beef and onion taco mix. Place the beef in the gaps in the tomatoes.

  6. Top off the tomatoes with some cheese, lettuce, and sour cream.

  7. Serve and enjoy!
