
Taco-stuffed Tomatoes

Create a delicious and healthy version of taco using our recipe below:

Ingredients List:
- ½ medium red onion
- 1 tsp olive oil
- 8 oz ground lean beef
- 1 tsp taco seasoning
- Salt and black pepper
- 4 medium tomatoes
- 1 oz cheddar cheese
- Lettuce
- 4 oz sour cream
Steps:
- Mince the red onion, then place on a pan with olive oil. Stir fry.
- As soon as the onion becomes nearly cooked, place beef on the pan. Mix with the onion thoroughly.
- Afterwards, pour 1 tsp taco seasoning and a pinch of salt and black pepper. Blend well and stir fry until cooked.
- Cut an X on all four tomatoes, then one across to make six evenly-sized sides. NOTE: DON’T CUT ALL THE WAY THROUGH!
- Open up the center of the tomatoes to make space for the beef and onion taco mix. Place the beef in the gaps in the tomatoes.
- Top off the tomatoes with some cheese, lettuce, and sour cream.
- Serve and enjoy!
